Chicken and Chilli Meatball Tomato Casserole
1 Chicken (British Poultry) (Red Tractor approved)
6 fresh large tomatoes,chopped (Red Tractor Approved)
2 tablespoon tomato puree
1 handful chopped herbs (basil, thyme, oregano and parsley)
2 clove garlic (chopped)
1 teaspoon brown sugar (Red Tractor Approved)
1 onion (finely chopped) (Red Tractor Approved)
1 cup white wine
6 medium size chilli sausages (Red Tractor Approved)
100 g sliced mushrooms (Red Tractor Approved)
1 small courgette (diced) (Red Tractor Approved)
3 tablespoon rapeseed oil (Red Tractor Approved)
2 tablespoon flour (Red Tractor Approve)
Salt and pepper

Chicken and Chilli Meatball Tomato Casserole
1 Chicken (British Poultry) (Red Tractor approved)

1 small courgette (diced) (Red Tractor Approved)
3 tablespoon rapeseed oil (Red Tractor Approved)
2 tablespoon flour (Red Tractor Approve)
Salt and pepper
- Divide the chicken into 6 joints. Remove the skin. Sprinkle the chicken joints with salt and pepper. Dredge with flour. Make the sausages into meat balls.
- Heat the olive oil in a pan. Brown the chicken on both sides. Drain and set aside.
- With the remaining oil the pan, sweat the onion and garlic. Ad in sausage balls. fried for 1 minute. Add in mushrooms, herbs, white wine, tomato puree, chopped tomatoes and sugar.Simmer for 10 minutes to make the sauce.
- Transfer the chicken into a slow cooker. Pour over the sauce. Cover and cook on High heat for 1 hour.
- Stir in the diced courgette. Cover and cook for further 10 minutes.
- Season to taste. Garnish with freshly chopped herbs.
